Strawberry Shortcake

Dear all,

A colleague of mine requested a strawberry shortcake. I didn't actually know what it was exactly and searching for recipes showed me all different variatios, from scone-like bakes to full on cakes. Here is my own take on the strawberry shortcake, with a mix of strawberries and raspberries!

First I baked two sponge cakes, nice and airy! I then cut them in half and added a mix of cream cheese and whipping cream.

Then I added sliced strawberries, and on the next layer raspberries:



All put together this looks like a scrumptious multi-layered summer cake.

And here's a peek inside... good eh?
