White chocolate cookies with custard

Dear all,

I haven't been baking enough recently, so I decided it was time for cookies. Today I present to you: White chocolate cookies. With custard. A recipe I found said to put custard powder in with the cookies, I had never tried that before. To be honest, I'm not sure what the custard powder adds, but they're pretty tasty!




Hehe I had the first batch in the oven too long (or rather, my oven was too hot I think) but the second batch worked perfectly. Above is the result of batch nr. 2 (with the bad batch hiding underneath!).

Mocha Shortbread

Dear all,

A friend came over for lunch and requested chocolate. That I can do! So I made mocha shortbread ( a recipe from Fortnum and Mason). The recipe calls for the use of rice flour (in combination with regular flour). That's something I have never used, and I'm still not quite sure of the benefits (though I've been told that it adds to the crunchiness?), either way, these biscuits are fan-tas-tic. Highly recommended!!

Quilt Cake

Dear all,

We recently celebrated my mum's birthday. She is a quilter (has her own company North Sea Quilters) and one of the quilts is called "Little Amsterdam" which I love. So for her birthday I decided to make a Little Amsterdam cake (with help from my brother!). For a pop of colour I used red velvet cake. Here it goes:

Stroopwafel cupcake

Dear all,

Instead of French I went for Dutch this time. I made my own little stroopwafel (caramel waffle) cupcakes! They even had little bits of stroopwafel inside. I hope they tasted good, they were gone in no time and I did not have a chance to try one! (which must be a good sign, right?)
