Gateau fondant aux nectarines

Dear all,

So this is a fancy name for a nectarine cake! Haha. But I love just saying the name, as I loved this very moist cake! Simple but effective.








This really was another great cake, which I made for a dinner party, where a friend also made a dessert: a delicious clafoutis, the perfect accompaniment for my little french dessert!

Mocha cake

Dear all,

For a friend I decided to make a mocha cake. A fairly common cake you'd think, except as someone allergic to coffee it is not a given to make. But it was a special request so I put my thinking hat on to make the best mocha cake I could think of (NOT a coffee cake. Mocha. Chocolate AND coffee!). This is the (successful) result!



A mocha cake to start with: real chocolate, real coffee and ground hazelnuts.


The nuts give a lovely structure to the cake, and added flavour of course.


The chocolate ganache was coffee infused, and I decorated the cake with roasted hazelnuts. Good stuff!

Flag cake

For a bbq over the summer I was asked to make a dessert. Now making a cake for a large group of people is not easy, nor is transporting it. I thus decided to make a traybake cake that I could assemble on location. I was insipired by a union jack cake I saw for the Queen's jubily and decided to make a flag cake. This was a Dutch/Japanese event and fortunately both countries have a cake friendly flag design! Here they are:




It was a simple vanilla/lemon sponge cake, with cream cheese icing and a variety of fruit to finish it off. The cake was lovely and fresh due to the lemon zest in it, which I also added a bit to the icing. The fruit on top really gave it a summery feel. It was a huge success!

Cheat Cheesecake

Dear all,

Sometimes I crave a proper dessert but don't want all the mess and effort of making a large portion. I recently discovered (yes, late, I know!) how easy it is to make a 1 portion cheesecake which tastes amazing. So here is my cheat cheesecake!




Simple: crushed digestive biscuits, mix cream cheese with some icing sugar and vanilla essence, then crush some strawberries with a teaspoon of icing sugar to make a kind of coulis. Slice some strawberries, assemble the whole thing in a glass, and tadaa. Cheat cheesecake. The possibilities are endless! Love~

White chocolate poundcake with pistachios

Dear all, It has been a while! I have not given up baking, just been lazy with this blog. But I'm back, so here's my most recent creation. Today my family came over for tea and cake, so I made them a white chocolate poundcake with pistachios. SO good. Here are the pics:





Not only does the pound cake have grated white chocolate in it, the greek yoghurt and cream cheese icing also had melted white chocolate in it! No extra sugar needed there, perfect sweetness.

We want more!! For sure!!
