Quinoa Bibimbap & Toppoki

Dear all,

Today I present Korean food with a twist. I found this recipe online in an attempt to make the food "healthier". Bibimbap is traditionally made with rice, meat and veggies. My version has quinoa, tofu, and...veggies. We didn't do any side dishes, as is common with Korean food, just had a big portion of toppoki to go with it! Toppoki is glutinous rice cakes in spicy sauce. Usually it has some sort of protein like egg or fish in it as well but we figured we'd had enough of that already, so "plain" is what we went for. It was my first time making this and boy was it good!
